Twice Baked Potatoes
When I was 14, my dad would have my brothers and me over for Sunday dinners. I always enjoyed spending quality time with my dad. The moment my brothers and I would walk into my dad’s house, we would smell the delicious aroma of twice baked potatoes. My dad has always been an amazing cook. He could turn anything into yummy food. My dad’s twice baked potatoes were an every Sunday tradition. Most of my family members would call my dad and ask for his twice baked potato recipe. These Sunday dinners have played a major role in my life over time and it has made me realize how fortunate I am to have shared some very memorable times with my dad and brothers.

My dad has always been really good in the kitchen creating different foods. He has always taken pride in his cooking and enjoyed teaching my brothers and me how to create many different meals from scratch. My dad would switch a few ingredients around in his twice baked potatoes which made them better and better every Sunday. My dad would bake the potatoes then scoop the inside of the potato out into a mixing bowl. He would then add ricotta cheese, other cheeses, minced garlic, horseradish and a variety of seasonings into the mixing bowl with the potato. Then, he would add the potato filling back into the potato shells and add a layer of cheese over the potato. They were ooey-gooey cheesy and rich. I loved the taste of the ricotta cheese because it has a thick texture. The potatoes could be paired with anything and would still be the main item on the plate. I always wanted to eat the entire tray of twice baked potatoes over anything else.

My parents’ had recently gotten divorced around that time which is why we started our Sunday dinners. During a tough time in my teenage years, it was always comforting for me to know that my dad was close and I could always count on him.  My dad would have us help him prepare dinner and learn how to cook for ourselves one day. We would all have fun and enjoy the time we shared together.
We may have been a broken family but my dad never made us feel apart. My dad moved a year after we started having Sunday dinners due to his job. It was very upsetting knowing we wouldn’t have that quality time with my dad anymore. The twice baked potatoes have had such a positive memory in my life and always bring a smile to my face thinking of the fun I shared with my dad and my brothers. I share a very strong bond with all three of them and they are still the most important men in my life. I hope one day my brothers and our families can all get together and make new memories together.
